My question is, could a cable shifter be used to shift a 75 series transfer case. Is there only 1 lever that moves in one direction, or is there 2 shift forks like the hilux transfer case.

if you converted the 2wd-4wd section to vacume using 60 series bits then the low-high selector would be easy to convert to cable
